4 to 5 oz. boneless, skinless chicken breast
½ cup wilted spinach
1 tbsp. pine nuts, toasted
2 tbsp. feta cheese, crumbled
1 tbsp. sun-dried tomatoes, chopped
1/4 tsp. chopped garlic
salt & pepper
1 tsp. chopped fresh basil
1 beaten egg
2 tbsp. bread crumbs
1 tbsp. olive oil

Procedure:
• Pound chicken breast
• Make stuffing by mixing spinach, basil, sun-dried tomatoes, feta cheese, garlic, bread crumbs, and beaten egg together
• Divide stuffing evenly between chicken breast and roll up
• Season with salt and pepper, sprinkle with paprika, and coat with olive oil
• Bake in oven @ 350º for 15-20 minutes
• Serve with pasta or rice, alfredo sauce or creamed veloute; garnish with fresh basil.
