It was the second year in a row that the Chef de Cuisine at the Scottsdale, Ariz. resort’s Orange Sky fine-dining restaurant took “Best of Show” honors at the Arizona Indian Gaming Association’s competition, this time with a winning dish of Mesquite Boar Rib with Acorn Squash and Agave-Chile Chutney.
Ron Dimas, Chef de Cuisine at Orange Sky, the fine-dining restaurant at Talking Stick Resort in Scottsdale, Ariz., was named champion of the Arizona Indian Gaming Association’s Expo 2014 Chef’s Challenge, reported the East Valley Tribune of Tempe, Ariz.
It was the second year in a row that Dimas was recognized with the competition’s “Best of Show” title.
The Expo allows Arizona tribal enterprise chefs to showcase their cooking technique and compete for top honors, the Tribune reported. This year’s contest featured a tailgate grill-off theme and called for the chefs’ “signature go-to recipes.”
A judging panel ranked entries based on originality, taste and food presentation, and the panel chose Dimas’ Mesquite Boar Rib with Acorn Squash and Agave-Chile Chutney as the winning dish.
In 2013, Dimas won with his flavorful Broken Arrow Ranch Venison Loin, the Tribune reported.
Dimas joined Talking Stick Resort in February 2010. Orange Sky is on the property’s 15th-floor and features 360-degree views of Arizona’s famous sunsets.
