Gifts from the sea took center stage at the Melbourne, Fla., club during “An Afternoon with Coco and her Pearls, Part Deux.”
On April 16, the Suntree Country Club in Melbourne, Fla., hosted a fundraiser for the Brevard Symphony Orchestra Fundraiser that channeled the essence of Coco Chanel, while also putting the talents of Suntree Country Club’s Executive Chef Lucas Handrahan on display, Florida Today reported.
A few weeks before the event, Chef Handrahan held a tasting for some of the women responsible for the fundraiser. The guest list included Darcia Jones Francey, who planned the event; Carol Gatto, president of the BSO South Guild; Sheila Gurr, vice president of the South Guild; and Leasha Flammio-Watson, whose Flammio Financial Group sponsored the afternoon of shopping, food and fellowship.
As reported by Suzy Fleming Leonard of Florida Today, the chef started the tasting with lobster salad with remoulade sauce in filo cups, chicken salad with smoked chipotle powder in filo cups, and crisp flat breads with toppings including sundried tomato, pesto, goat cheese, spinach, boursin cheese and fresh basil.
After the tasting, Handrahan brought his guests into the kitchen for a demonstration on how to make his decadent shrimp and grits, one of the most requested items on the Suntree Country Club menu.
