Semiahmoo BBQ Braised Beef Brisket

Ingredients
1 beef brisket
2 cups chili powder
¼ cup garlic powder
¼ cup onion powder
2 tbsp. cracked black pepper
1 4 cup kosher salt
1 tbsp. paprika
8 tsp. brown sugar
Procedure:
• Trim the excess fat from the brisket and trim to a uniform thickness, to ensure even cooking.
• Combine all of the ingredients and sprinkle all over the meat, making sure to evenly coat the entire brisket. Gently rub the seasonings into the meat. Cover with aluminum foil and let the meat sit out on the counter for one hour, to allow seasoning to penetrate.
• Preheat smoker to 260º F.
• Place meat in the smoker (or on the grill) and cook over indirect heat until tender (4 to 5 hours). Cover and let rest for 15 minutes before slicing and serving.
