Axline’s new menu features whimsical comfort food.
Lakeway Resort and Spa, Austin, Texas, has announced the hiring of Jeff Axline as the new Executive Chef. The resort is managed by Redstone Companies Hospitality.
Before coming to Austin, Axline made his mark in the Houston restaurant scene where he helped launch The Glass Wall Restaurant in 2006 and then joined The Houstonian Hotel, Club & Spa as Executive Sous Chef in 2008. Axline won Up-and-Coming Chef of the Year at the My Table Magazine 2008 Houston Culinary Awards before bringing his culinary talents to the Texas Hill Country.
The chef’s new menu features appetizers like Creole BBQ Shrimp, Braised Short Rib Nachos, and Dr. Pepper Fried Texas Quail, as well as sandwiches like the Gulf Coast Crab Cake Sliders and Fried Green Tomato BLT. More Texas-inspired specialties on the menu include the Chicken Fried Sirloin with buttermilk mashed potatoes, English peas, and bacon-peppercorn gravy; Grilled Rib Eye with rosemary garlic fries and garlic herb steak butter; and Idaho Rainbow Trout with smoked almonds, tiny green beans, and salt roasted potatoes in lemon rosemary butter.
