Pasta Dough
Amt Ingredient
28 egg yolks
3 whole eggs
1 tbsp. milk
1 tbsp. olive oil
1300 grams AP flour
• In a large mixing bowl, add flour, creating a well; add eggs, milk and oil to well. Mix until dough gives a little resistance. Wrap dough and refrigerate for two hours before rolling out into pasta sheets.
Pumpkin Ravioli Filling

½ small pumpkin,
roasted
½ acorn squash,
roasted
1 cup mascarpone
salt & pepper
Squash Compote
Amt Ingredient
½ acorn squash,
medium dice
½ butternut squash,
medium dice
1 apple,
medium dice
1 pear, medium dice
1 cinnamon stick
3 star anise
¼ cup maple syrup
½ tsp. cider vinegar
• Toss all ingredients and roast for 35 minutes at 350°F.
