Competition held at the 2011 Hospitality Show held at the Union League of Philadelphia.
On Monday, March 14th, the Philadelphia Country Club culinary team, led by Executive Chef Nathan Wakefield, captured the coveted First Place in the 2011 Hospitality Show held at the Union League of Philadelphia and Wakefield prevailed and was named the 2011 Philadelphia Iron Chef.
The competition came from Merion Cricket Club, Philadelphia Cricket Club, Aronimink Golf Club, Union League of Philadelphia, Cedarbrook Country Club, Newark Country Club and others.
PCC’s Chef Wakefield’s signature, winning dish, “Duck, Duck, Goose,” was a combination of locally sourced ingredients. The layered dish started with crisp apple & fennel slaw topped with apple wood-smoked duck breast. The second layer was the Chef’s own spiced duck confit, a recipe he has worked for quite some time to master. The final layer was seared foie gras topped with Hawaiian pink salt.
The event was judged by a panel of local media celebrities who selected the winner based upon the taste and presentation. Chef Nathan, Executive Sous Chef Nick Fahringer and Banquet Sous Chef Kyle Dailey prepared “Duck, Duck, Goose” for the over 400 attendees of the event.
