Yield: 12 servings
These Asian inspired wraps add a riot of delicious flavor and color to menus.
Ingredients:
1 1/2 tablespoons sesame oil
3 pounds boneless, skinless chicken breast, chopped
1/2 cup soy sauce
1/3 cup rice vinegar
6 tablespoons honey
3 tablespoons grated fresh ginger
1 1/2 tablespoons minced fresh lemongrass
3 mangos (12 count), chopped, divided
36 small lettuce leaves
3/4 cup diced red bell pepper
6 tablespoons sliced green onion
6 tablespoons chopped fresh cilantro
Procedure:
Heat sesame oil in pan over medium heat. Add chicken and cook, stirring frequently, until lightly browned. Stir in soy sauce, vinegar, honey, ginger and lemongrass.
Finely chop half of the mango and add to the skillet. Cook for 5 minutes or until filling is very thick; let cool slightly.
Spoon chicken filling into lettuce leaves and top with remaining mango, bell pepper, green onion and cilantro.
