1 1/2 tbsp. sesame oil
3 pounds boneless, skinless chicken breast, chopped
1/2 cup soy sauce
1/3 cup rice vinegar
6 tbsp. honey
3 tbsp. grated fresh ginger
1 1/2 tbsp. minced fresh lemongrass
3 mangos (12 count), chopped, divided
36 small lettuce leaves
3/4 cup diced red bell pepper
6 tbsp. sliced green onion
6 tbsp. chopped fresh cilantro
• Heat sesame oil in pan over medium heat. Add chicken and cook, stirring frequently, until lightly browned. Stir in soy sauce, vinegar, honey, ginger and lemongrass.
• Finely chop half of the mango and add to the skillet. Cook for 5 minutes or until filling is very thick; let cool slightly.
• Spoon chicken filling into lettuce leaves and top with remaining mango, bell pepper, green onion and cilantro.
