Ingredients
4 Fresh bratwurst
1 quart Local ale
2 cups Clover honey
1 Fresh mango
1 Yellow onion
5 Garlic cloves
3 sprigs Fresh thyme
2 cups Chicken stock
1 Nappa cabbage
1 Red onion
1 Red apple
1/4 cup Apple cider vinegar 1/4 cup Grain mustard
2 Serrano chiles
1 Savoy cabbage
1 dozen Soft fresh rolls
Procedure:
- Sear off bratwurst and set aside. Rough chop garlic, onion and mango and layer on the bottom of a 400 pan. Lay bratwurst on misen place and add beer, honey and chicken stock. Cover with parchment paper and slice vents on top. Braise over at 280° for 2.5 hours add let cool.
- For the Slaw: Thinly slice nappa and savoy cabage and put into a mixing bowl. Cut apple into matchstick and slice thin red onion & Serrano and mix into cabbage. Add apple cider vinegar and grain mustard and gently toss.
- To Build Sandwich: Lightly toast bun, insert 1 bratwurst. Garnish generously with slaw and serve with your choice of chips or fruit.
