After besting top chefs from Canada, Chile and Brazil, the Executive Chef at the Pepper Pike, Ohio club won the semi-final, and will compete as the representative of the Americas in the finals, held July 5, 2014, in Stavanger, Norway. The Global Chefs Challenge is an international competition presented by the World Association of Chefs Societies, which is held every two years.
Competing against the top chefs from Canada, Chile and Brazil, Scott Ryan, CEC, Executive Chef of The Country Club in Pepper Pike, Ohio, bested them all, winning the Global Chefs Challenge semi-final, and earning the honor to compete as the Americas representative against some of the best Chefs in the world next year in Norway.
The Global Chefs Challenge is an international competition presented by the World Association of Chefs Societies (WACS), which is held every two years as part of the WACS World Culinary Congress. Ryan won the American Culinary Federation’s (ACF) Chef of the Year award last year at the ACF National Conference in July, affording him the opportunity to compete at this year’s event.
“It was an amazing event and I had a lot of fun once it got underway,” Ryan said. “I am honored to represent the Americas in the Global Chefs Challenge, and feel blessed to have a great culinary, service and management team at the club to support me. The Country Club’s membership is also very supportive of our culinary program and deserves just as much credit for allowing us to have fun at work every day. It is rewarding to see that with hard work and dedication, anyone’s dreams are achievable!”
At the Global Chefs Challenge, the competitors were given three hours to create a three-course menu for four people, utilizing specific ingredients. For his first course, Chef Ryan prepared Wasabi-Yogurt crusted Halibut, Salmon Langoustine Roulade, Pickled Beets, Avocado, and Beurre Blanc. His second course consisted of Roasted Kobe Strip Loin, Short Rib Croquette, Cauliflower Potato Gratin, Carrots, Chanterelles, Pearl Onions, Sweet Corn Pudding and Mustard Glacé. And for dessert, Ryan prepared a Chocolate Pave with Mango Tea Mousse, Strawberry Macaroon, and Marcona Almonds.
“We are very proud of Chef Scott’s accomplishments and know that he will be an outstanding representative in this prestigious competition,” said Robert Josey, The Country Club’s General Manager. “The members and staff at The Country Club look forward to cheering him on in next year’s event.”
The finals of the WACS Global Chefs Challenge will be held in Stavanger, Norway, with the seven semi-final regional winners competing on July 5th, 2014.
