Amt Ingredient
1 whole duck breast, skin removed
1 cup milk
1 whole egg
2 cups all-purpose flour
2 ozs. paprika
2 ozs. salt
1 oz. onion powder
1 oz. garlic powder
1 oz. black pepper
Procedure:
• Slice duck breast lengthwise (as if to butterfly) into two separate pieces.
• Mix together milk and egg to make an egg wash.
• Mix together dry ingredients to make a seasoned flour.
• Place duck breast into seasoned flour and coat evenly.
• Remove duck from flour and place into egg wash, fully submerging in the wash.
• Remove from egg wash and place into flour, coating evenly.
• Repeat previous two steps.
• Piece breaded duck pieces into a 350-degree fryer and cook for one-and-a-half minutes until browned and crisp.
