The team, led by Director of Culinary Operations, Richard Brumm, operates six full service kitchens in four freestanding buildings serving eight dining operations.
BBCulinary's from-scratch approach starts with products brought into the door. Locally sourced seafood is the resounding highlight of the menu with fresh gulf seafood landing on the dock daily from small Florida fishermen.
Everything from pasta to freshly milled spices are produced by this high performing culinary team. Citrus juices, vegetable juices, vegetable powders, nut pastes, charcuterie, frozen dairy and non-dairy products, and even nut oils are fabricated on-premise to ensure the utmost quality to discerning members.
Bonita Bay Culinary hosts Chaine des Rosissuers, ACF and CMAA educational, and recreational events and is an approved practical ACF exam site hosting three exams every summer.
Brumm is the Certification Chair for the local ACF Chapter, a member of CMAA, ACF Chef of the Year 2019 of the ACF Caxambas Chapter of Southwest Florida and 2009 Southeast Region Chef of the Year.
