Chipotle BBQ Ribs with Molasses Bourbon Sauce

Ingredients:
- 12 ozs. pale ale
- 1/4 cup molasses
- 1 tsp. chile pepper
- 1 tsp. barbecue spice
- 1/2 tsp. thyme leaves
- 1 tbsp. sugar
- 1 tsp. sea salt
- 1 ea. bay leaf
- 1/2 tsp. white pepper
- 1 tbsp. vegetable oil
- 1/2 cup white onion, diced
- 1 cup red wine vinegar
- 2 cups ketchup
- 1/2 cup molasses
- 1/4 cup water
- 1/2 cup bourbon
- 1 1/2 tsp. barbecue spice
- 1/2 tsp. thyme leaves
- 4 ea. beef spareribs
Cooking Directions:
- To prepare Chipotle Molasses-Ale Marinade: Combine beer, molasses, chile pepper, barbecue spice, thyme, sugar, sea salt, bay leaf, and black pepper. Mix well and refrigerate until ready to use.
- To prepare Molasses Bourbon Sauce: Heat oil in sauté pan over medium-high heat and sauté; onion for 3 to 5 minutes or until translucent. Add vinegar and reduce by one-fourth. Stir in ketchup, molasses, water, bourbon, barbecue spice, and thyme. Bring to a boil and simmer for 30 minutes.
- To prepare Chipotle BBQ Ribs: Combine Chipotle Molasses-Ale Marinade with beef spareribs. Marinate for at least 4 hours, or up to 24 hours. Roast for 2 hours in a 300°F oven or until meat is juicy and tender. Grill over high heat for 2 to 3 minutes while basting with 1⁄2 cup Molasses Bourbon Sauce.
