Cajun Shrimp Boil

Ingredients
¾ lb. 26/30 shrimp, peeled and deveined
1 cup white wine
1 tbsp. lemon juice
1 tbsp. chopped shallot
2 tsp. chopped garlic
¼ cup total “trinity” (equal amounts diced onion, celery and green pepper)
¼ tsp. or to taste cayenne pepper
½ tsp. blackened seasoning
1 tbsp. butter
pinch chopped chives
2 lemon wedges
to taste salt
Procedure:
• Put all ingredients (except butter, chives and lemon wedges) in a small pan and bring to a boil.
• When the shrimp are cooked, remove the pan from the heat and swirl in the butter.
• Check the seasoning and adjust as necessary.
• Serve in a bowl and garnish with chopped chives and lemon wedges.
