Lamb Burger with Onion Tomato Salad and Tzatziki Sauce

Yield: 12 burgers
Ingredients
5 lbs. ground lamb
2 tbsp. fresh chopped garlic
2 tbsp. fresh chopped thyme
1 tbsp. fresh chopped rosemary
4 dashes Worcestershire sauce
to taste kosher salt and pepper
for garnish feta cheese
for garnish fresh baby spinach
• Mix ingredients together and form into patties. Season patties with kosher salt and fresh ground pepper before cooking.
For the Onion Tomato Salad:
Ingredients
1 onion, thin julienned
2 tomatoes, seeded, then julienned
2 pinches sumac
dash olive oil
pinch kosher salt
• Toss ingredients together.
For the Tzatziki Sauce:
Ingredients
8 ozs. plain yogurt
2 cucumbers, peeled and seeded
½ lemon, juiced
1 tbsp. fresh dill
3 cloves garlic
2 tbsp. olive oil
to taste salt and pepper
• Mix all ingredients in food processor; blend well. Refrigerate for at least one hour before use.
Final assembly:
• Top cooked burgers with onion tomato salad, feta cheese and baby spinach.
• Serve with tzatziki sauce.
