1 lb. kosher salt
1 tsp. cracked black pepper
1 tbsp. dill
1 lb. sugar
2 lbs. Alaskan halibut
Procedure:
- Mix together salt, pepper, dill and sugar.
- Pour over halibut and cure for two days, turning over once. Make sure a weight is placed on halibut during curing process.
