Amt Ingredient
1 onion, chopped fine
1 carrot, chopped fine
3 stalks celery, chopped fine
2 cloves garlic, minced
zest of 1 lemon
4 bay leaves
5 sprigs fresh thyme
½ tsp. fresh cracked black pepper
2 lbs. venison shanks
1 tsp. salt
2 cups white wine
2 cups chicken stock
Procedure:
• Flour and brown venison in olive oil
• Add all ingredients except wine and lemon
• Braise for 2 to 2-1/2 hours
• Add wine and lemon; simmer for 30 minutes
